There are no recipes in winemaking; every vintage, harvest day and barrel are different, continuous experimentation and learning are essential. One prime example of this is the way a selection is created.

How it’s created

we matured the best lots of the vintage for 10 months in 300 litre French and Austrian barrels (100% new), then we selected the best of them to make these 1021 bottles

On the nose

ethereal rose, raspberry, red plum and cherry, rose and white pepper, nutmeg

On the palate

delicate flower notes (rose, violet), raspberry and rosehip, a slightly spicier character, ripe fig and dried cranberries in the finish
