How it’s created

fermentation begins with wild yeast and finishes with traditional yeast; 3 months of maturation in stainless steel tank, 5% in a new French barrel

On the nose

elderflower, white grapefruit, candied lemon peel and pineapple

On the palate

white grapefruit and candied pineapple complemented by ginger, white pepper and lemon juice
